Christmas Day: Fail


This morning I decided to make a Fritata that I had saw on the Early Show yesterday. To my suprise it turned out SOOOOOOO good. You couldnt even taste the eggs in it and it tasted like a spinach and cheese quiche. Here's a link in case anyone wants to try this pan full of deliciousness. My sister pretty much ate the whole thing and gave me 1/3 of it. It's a pretty healthy choice because there is barely any carbs in there except for the miniscule layer of bread crumbs lining the bottom of the pan. I plan on making this every weekend while I am on South Beach because of its healthiness and scrumptiousness.

I had bunch of cheats yesterday and I excused them just because it was Christmas. We went to dinner to our family friends house and I had half a piece of Naan because I was so hungry along with a bit of rice in the Dal Makhani. I also had a piece of my sister's Cinnamon Roll because she made it from scratch at home and the aroma filled the house so it was pretty hard to resist.

Not so good day ....

So today was Christmas Eve and both my parents had the say off. We went to go finalize the deal on my car (I got a 2011 Urban Titanium with Beige Interior Honda Civic LX..Holla!) and afterwards we went to go eat at an Indian Buffet that was near the dealership. Seeing all that yummy food I was so tempted to cheat just a little bit. One of my favorite Indian dishes is Pav Bhaji and I couldn't resist the temptation. Pav Bhaju is an Indian take on Sloppy Joe's made with all sorts of vegetables paired with a bun. I had just one tiny little piece of bun which was better than if I wasn't on this diet because then I would for sure had 3 or 4. That was my first cheat of the day. I mostly ate Chili Chicken and all the subzis at the buffet. They were good and all but I still missed my naan and rice that I would normally have ate. In my mind, I kept thinking that this is only a temporary thing for a few months.
At the end my mom was claiming how good the desert was so I had to try a little piece. I only had 1/2 of the Gulab Jamun when if I wasnt on this diet I would probably have like a whole one, so I guess theres improvement there. The buffet was so filling that it accounted for my breakfast, lunch, and dinner.
After 10 hours of not eating, I started getting hungry. My sister and I decided to make a salad with our favorite dressing, Balsamic Vinegar. I also had my leftover Espresso custard from yesterday. I paired this with a glass of warm milk with a sprinkle of brown sugar. I also had some spiced peanuts my mom made.

Day 3: Success!! (-2llbs!)


Finally, this morning I got the courage/remembered to weigh myself. In high school I used to weigh myself everyday but I realized thats unhealthy. So throughout college because of my excessive weight gain I never really weighed myself because everytime it was a disappointment.
This morning I stepped on the scale and it was less than the last time I weighed myself back in November!! Made me soo happy and so much more motivated to continue this diet.

For breakfast I had my usual tomato, green pepper, and onion omelette. Today, I decided to have my glass of 1% milk along with it.

For some reason, my sister was hungry like 2 hours after breakfast so I had to make her an early lunch and myself as well (because I wasn't about to make lunch twice.) We decided to have Greek Salad today with dressing made from scratch. It turned out actually really good, but a bit salty so I added some leftover sweet salsa I got from Baja Fresh the other day. We chopped some tomatoes, cucumbers, green peppers, onions, olives, and romaine lettuce. For the dressing we used EVOO, lemon juice, salt, and pepper with a tint of parsley, and topped with oregano and garlic powder. Turned out pretty delish and is definitely a VERY healthy salad.
After lunch, me and my sister were craving some sweets and yes I know I caved in and had a freaking Lindt. Oh well. My sister and I were craving more sweets so we looked up some dessert recipies acceptable for South Beach online. We found one for espresso custard and it actually turned out pretty legit. For snack I had a string cheese and some dhokla (indian chick pea flour cake) for snack time. After that I was pretty full and left the house to look at cars so did not have the option to indulge myself in more food.
When we returned me and my sister were so hungry, we were almost tempted to stop at McDonalds and eat Chicken Nuggets and take off the fried shell (lol, yeah we're lame). We came home and my mom made us some Indian Cheele which we ate with some leftover chole from yesterday. Pretty filling and appetizing.

Phase 1: Day 2

So today was my second day of my losing weight endeavor, and I can definitely say it went a lot better than yesterday. Less temptations and more self-control. Its only day 2 and I really want some carbs in me but I keep thinking this is only 2 weeks!

For breakfast, since there arent that many options, I had my usual omelette with tomatoes, green peppers, and onions, topped with some cheese along with some ketchup. I forgot to drink my 1% milk but I am about to go have it right now. I guess this could be considered lunch since I ate this at 1pm because I woke up at 12.

For lunch/dinner I ate a little vegetable medley mixed with spagethi sauce and mozzarella cheese and topped with feta cheese. This is also known as Ratatouille. The vegetables included in this was green peppers, onions, tomatoes, mushrooms, green peppers, and zucchini along with oregano and garlic powder for an extra spice. This was really appetizing and it felt like we were eating healthy pasta without the carb-filled noodles.

For dinner, I had chole (chick peas) my mom made. I ate them just plain and had about 2 small bowls of them. I also had the Indian cabbage my mom made with some yogurt.
I went to the grocery store to pick up some necessities for the household and I picked up some string cheese to enjoy during my snacks. Since my dinner wasnt that filling I decided to have that as well.

So the day went REALLY well, except for.... the bag of Lindt chocolate my dad got from work. Those are one of my very favorite chocolates and I could not resist the temptation. I had only one and savored it reeeeally slowly. On a normal basis I would have had like two so hey, I'm improving on my healthiness.

Diet Day 1


So after a long time of getting my mind set on starting a diet, I decided to start after finals were over. I started South Beach Diet around the same time about 4 years ago in my senior year of high school. I lost 15-20lbs then and I am determined to lose about that many or if not more! I want to lose all my college weight I have gained which is a disgusting 30lbs since the ending of my previous weight loss. So basically, I've gained all the weight back I lost in high school plus 10 more. Thinking about that makes me sick, and it is time to take action so when I go to medical school one day, I dont become an obese person.
Today, I embarked on my weight loss journey, even though it was supposed to start December 20th, I had to move out so I knew I wouldnt be able to start it then. So today, December 21st marks Day 1 of Phase 1 of South Beach diet. In this blog I want to mark my struggles and achievements of my weight loss journey, because it is going to be a long one! (It took me 3 months last time to lose the weight.)
Basically, in South Beach Diet you cut out all the foods that are high-carb and have a high glycemic index. So basically, all you can eat is lean meat, some dairy (even though some sites say not to), and plenty and plenty of vegetables (but no starchy ones like corn, carrots, potatos, etc.) This is only Phase 1 and lasts about 2 weeks or longer if you want it to. You should lose 5-10lbs during that time, so I am hoping by New Year's Eve I am atleast 5lbs lighter.
So today, started off REALLY well. I was so motivated to get my weight loss in action. For breakfast I had an omelette with green peppers, tomato, and onions with a slice of cheese along with a 1% glass of milk. I really missed my toast this morning and was craving some bread but I had to get over it. For lunch I made a Chole Chaat (Garbanzo beans salad), which included tomatos, cucumbers, peanuts, and onions topped with cilantro, salt, lemon, and grounded red mirch (red peppers). This was really satisfying and just one medium bowl of it made me extremely full. Throughout the day, I was a bit thirsty and had water with crystal light pink lemonade in it (I'm hoping that it is SBD approved since there is no sugar in it.) So pretty good so far.
Dinner time came around and I failed! My family went to Baja Fresh for dinner, and I got a burrito bowl with no nice which was fine but before dinner they always serve chips while you wait for your food. My hunger got the best of me and I had about 10 chips with the different salsas. Even though I should have not caved in, I guess it is okay since it was my first day and I had a pretty good start.
The only strange part of today was around mid afternoon I felt really tired even though I had a good nights sleep. I was thinking it may be the carb withdrawal but that should not set in until day 3 or 4. Oh well, we'll see what happens tomorrow.
I'm also to weigh myself because I know during finals I gain like 1 or 2 lbs so I'm definitely avoiding it but I need to step up or else I will not know if this diet is actually working.
